Chicken with Chilli Cheese and Broccoli

This is my favourite dehydrated trail meal. A tasty mix of cheese and chilli are a warming combination at the end of a long day. Make sure to rehydrate the chicken well otherwise it can be a little chewy.

Ingredients – 1 meal

  • 2 large Chicken breasts
  • 1/2 Broccoli head
  • 1/4 head of Cauliflower
  • 1 Bell pepper
  • 6 tsp / 1/4 cup Cheddar Cheese powder
  • 2 scoops MCT oil powder (140 cal)
  • Pinch of (Himalayan) Salt
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Chilli powder
  • 2 tsp Olive oil (240 cal)

Instructions – Dehydrating

  1. Chicken: Pressure cook the chicken breasts for 15-20 minutes (season if desired, but no oils)
  2. Cut up the meat into small cubes
  3. Dehydrate chicken for approx 7h at 60C
  4. Broccoli: Cut up the broccoli into small florets
  5. Boil the broccoli for 5 minutes
  6. Dehydrate the broccoli for approx 6h at 50C
  7. Peppers: Cut up the pepper into small cubes
  8. Dehydrate the pepper for approx 8h at 50C
  9. Cauliflower: Grate the cauliflower to make rice
  10. Steam for 10 minutes
  11. Dehydrate the rice for 6h at 50C
  12. Combine all the dry ingredients in a bowl, mix throughly and store
  13. Vacuum seal for longer term storage ahead of your backpacking trip
  • Dehydration times/temperatures will vary dependent upon the dehydrator used. Consult your manual.

Rehydrating

  1. Add approx 400-450ml of boiling water to the dry ingredient
  2. Leave for 15-20 minutes
  3. Add the olive oil and stir through
  4. Enjoy
