Beef Coconut Thai Curry with Cauliflower Rice

This recipe rehydrates well, provided that the beef is dehydrated with some mixed coconut flour – This is a keto alternative to using breadcrumbs and in my testing more stable than almond flour. The quantities listed below are for one large meal with approximately 1200 calories when olive oil is added.

Ingredients – 1 meal

  • 300g Beef (360cal) or 2 Chicken Breasts
  • 1/3 cup Coconut flour (200cal)
  • 1/2 Cauliflower as rice (50cal)
  • Green beans / broccolli
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/2 tsp Chilli powder
  • 1/2 tsp Coriander
  • 1/2 tsp Cumin
  • 4tsp Coconut creamer (240cal)
  • 2 tsp MCT powder (140cal)
  • 2 tsp Thai basil (or big pinch dried crushed leaves)
  • 1/2 tsp Lemongrass powder
  • 2 tsp Olive Oil (240 cal)

Instructions – Dehydrating

  1. Beef: Add 1/4 cup of coconut flour per 454g (1lb) of beef
  2. Mix thoroughly, but do not compress the beef
  3. Fry without oil until browned
  4. Dehydrate for approx 7h at 60C
  5. Chicken: Pressure cook the chicken breasts for 15-20 minutes (season if desired, but no oils)
  6. Cut up the meat into small cubes
  7. Dehydrate chicken for approx 7h at 60C
  8. Green Beans or Broccoli Cut up the broccoli into small florets or the beans into 2cm sections
  9. Boil/blanche the beans/broccoli for 5 minutes
  10. Dehydrate the beans/broccoli for approx 6h at 50C
  11. Cauliflower: Grate the cauliflower to make rice
  12. Steam for 10 minutes
  13. Dehydrate the rice for 6h at 50C
  14. Combine all the dry ingredients in a bowl, mix throughly and store
  15. Vacuum seal for longer term storage ahead of your backpacking trip
  • Dehydration times/temperatures will vary dependent upon the dehydrator used. Consult your manual.

Rehydration

This is a large meal. In a pot of 900ml or larger:

  1. Add approx 5-600 ml of boiling water to the dry ingredient
  2. Leave for 15 minutes
  3. Add the olive oil and stir through
  4. Enjoy

Notes

Vacuum seal the ingredients unless you intend to use them within a few days.  This is important as the flour and beef contain fats and will go rancid otherwise.
