Chicken with Chilli, Cheese and Broccoli

This is my favourite dehydrated trail meal. A tasty mix of cheese and chilli are a warming combination at the end of a long day. Make sure to rehydrate the chicken well otherwise it can be a little chewy.

Ingredients – 1 meal

  • 2 large Chicken breasts
  • 1/2 Broccoli head
  • 1/4 head of Cauliflower
  • 1 Bell pepper
  • 6 tsp / 1/4 cup Cheddar Cheese powder
  • 2 scoops MCT oil powder (140 cal)
  • Pinch of (Himalayan) Salt
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Chilli powder
  • 2 tsp Olive oil (240 cal) – to be added when eating

Instructions – Dehydrating

  1. Chicken: Pressure cook the chicken breasts for 15-20 minutes (season if desired, but no oils)
  2. Cut up the meat into small cubes
  3. Dehydrate chicken for approx 7h at 60C* 4. Broccoli: Cut up the broccoli into small florets
  4. Blanche / Boil the broccoli for 4-5 minutes (this helps the stems cook a little)
  5. Dehydrate the broccoli for approx 6h at 50C* 7. Peppers: Cut up the pepper into small cubes
  6. Dehydrate the pepper for approx 8h at 50C* 9. Cauliflower: Grate the cauliflower to make rice
  7. Steam for 10 minutes
  8. Dehydrate the rice for 6h at 50C
  9. Combine all the dry ingredients in a bowl, mix throughly and store
  10. Vacuum seal for longer term storage ahead of your backpacking trip
  • Dehydration times/temperatures will vary dependent upon the dehydrator used. Consult your manual.

Rehydrating

  1. Add approx 450ml of boiling water to the dry ingredient
  2. Leave for 15 minutes
  3. Add the olive oil and stir through
  4. Enjoy
