This is my favourite dehydrated trail meal. A tasty mix of cheese and chilli are a warming combination at the end of a long day. Make sure to rehydrate the chicken well otherwise it can be a little chewy.
Ingredients – 1 meal
- 2 large Chicken breasts
- 1/2 Broccoli head
- 1/4 head of Cauliflower
- 1 Bell pepper
- 6 tsp / 1/4 cup Cheddar Cheese powder
- 2 scoops MCT oil powder (140 cal)
- Pinch of (Himalayan) Salt
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1 tsp Chilli powder
- 2 tsp Olive oil (240 cal) – to be added when eating
Instructions – Dehydrating
- Chicken: Pressure cook the chicken breasts for 15-20 minutes (season if desired, but no oils)
- Cut up the meat into small cubes
- Dehydrate chicken for approx 7h at 60C* 4. Broccoli: Cut up the broccoli into small florets
- Blanche / Boil the broccoli for 4-5 minutes (this helps the stems cook a little)
- Dehydrate the broccoli for approx 6h at 50C* 7. Peppers: Cut up the pepper into small cubes
- Dehydrate the pepper for approx 8h at 50C* 9. Cauliflower: Grate the cauliflower to make rice
- Steam for 10 minutes
- Dehydrate the rice for 6h at 50C
- Combine all the dry ingredients in a bowl, mix throughly and store
- Vacuum seal for longer term storage ahead of your backpacking trip
- Dehydration times/temperatures will vary dependent upon the dehydrator used. Consult your manual.
Rehydrating
- Add approx 450ml of boiling water to the dry ingredient
- Leave for 15 minutes
- Add the olive oil and stir through
- Enjoy
